- 1 brown onion roughly chopped
- 3 garlic cloves chopped
- 3cm piece ginger peeled chopped
- 125g packet blanched almonds
- 2 green chillies deseeded chopped
- 1 1 2 cups greek style natural yoghurt
- 2 tablespoons lemon juice
- 1 tablespoon brown sugar
- 1 tablespoon ground cumin
- 2 teaspoons ground coriander
- 1 2 teaspoon ground cardamom
- 1 2 teaspoon garam masala
- 3 teaspoons salt
- 2 tablespoons canola oil

- trim all fat from lamb place into a large ovenproof dish use a small sharp knife to make deep cuts all over lamb this helps marinade to penetrate lamb
- process onion garlic ginger almonds chillies and 1 2 cup of yoghurt in a food processor until a thick paste forms transfer to a bowl stir in remaining yoghurt lemon juice sugar cumin coriander cardamom garam masala and salt refrigerate 1 2 cup of marinade
- using your fingers rub remaining marinade over both sides of lamb making sure it is pushed into cuts cover refrigerate for at least 24 hours
- bring lamb to room temperature preheat oven to 200u00b0c drizzle lamb with oil cover with baking paper cover dish tightly with foil roast for 1 1 2 hours remove foil and paper spread reserved marinade over lamb where marinade has fallen off bake uncovered for a further 45 minutes or until cooked to your liking stand for 15 minutes before slicing serve
