  • 1 cinnamon stick
  • 1 carrot halved lengthways thickly sliced
  • 1 red capsicum chopped
  • 1 zucchini chopped
  • 3 royal gala apples peeled cored cut into thick wedges
  • 2 tablespoons honey
  • 1 cup pearl barley rinsed drained
  • 1 3 cup roughly chopped fresh coriander plus extra sprigs to serve
  • orange zest to serve

  • place lamb and flour in a snap lock bag seal shake to coat heat oil in a large heavy based saucepan over medium high heat add lamb cook turning for 5 minutes or until browned all over transfer to a plate add eschalot to pan cook stirring for 3 minutes or until softened add garlic ginger and spices cook stirring for 2 minutes or until fragrant
