  • 2 3 cup fresh flat leaf parsley leaves

  • 250g cherry truss tomatoes

  • 4 x 2cm thick slices white vienna bread

  • preheat grill on high line a baking tray with foil place pistachios and parsley in a small food processor process until finely chopped add oil lemon juice cumin and chilli process until combined adding 1 to 2 tablespoons water if mixture is too thick season with salt and pepper
  • place tomatoes on prepared tray spray with oil grill for 5 minutes or until skins start to split season with salt and pepper meanwhile leaving a 1cm to 1 5cm edge remove and discard the soft bread from the centre of each slice spray both sides of bread with oil
  • heat a large frying pan over medium heat toast bread on 1 side turn carefully crack 2 eggs into each hole cook partially covered for 3 to 4 minutes or until egg white is set and yolk is cooked to your liking serve with tomatoes drizzled with parsley sauce
